Mango Sticky Rice. Khao Neaw Ma-Muang.

Mango sticky rice is a Thai staple that can be found in any Thai-style restaurant or even on the street-served in a banana leaf if you're lucky. It's a genius dish, simple yet complex: the cool, fresh, sweet and tangy mango, with the comforting, carb-y, sticky rice... an elevated/Thai version of rice pudding-with mango taking it to the next level. I tried this Thai snack all over the country, but found THE BEST mango sticky rice at May Kaidee's Vegetarian in Bangkok (also one in Chiang Mai). They serve a beautiful red (aka black) rice, with fresh coconut meat strips, coconut milk, and a sprinkle of toasted sesame seeds - making for a totally well balanced bite.

Burmese Tea Leaf Salad.

This is one of my fave S.E Asian dishes. I didn't have the chance to visit Burma on my recent trip to asia but had the pleasure of eating at many Burmese restaurants in Thailand and Cambodia. Burmese food is very vegetarian friendly with lots of healthy salads and tofu dishes... they classically include lots of onion (especially fried), garlic and fresh herbs. Tea leaf salad doesn't look so pretty when it's all mixed together but tastes incredible.

Linda McCartney. Photographer. Singer. Activist. American. 1941 – 1998.

Linda married Paul McCartney in 1969, and the two had three children: Mary Anna, (fashion designer/activist) Stella, and James. Linda was a member of Paul's band, Wings, and she also wrote/recorded music independently (Seaside woman- Suzy and The Red Stripes). Linda was house photographer at the Fillmore East concern hall and shot numerous musicians including the Stones, Doors, Frank Zappa, Kinks, the Who, the Beach Boys, the Byrds, the Beatles etc. During her days as a professional photographer, she published Linda McCartney's Sixties: Portrait of an Era. As a vegetarian and animal rights activist, Linda wrote several cookbooks, and also created the Linda McCartney Foods company, selling ready made veggie food. Linda famously said "if slaughterhouses had glass walls the whole world would be vegetarian". Sadly, Linda passed away at age 56 from breast cancer. She was a beautiful human being and a personal inspiration.
