What is “say-tan”? Seitan is a traditional Japanese product made from the protein in wheat (aka gluten). With an impressively meat-like texture and robust flavor, seitan is both high in protein and low in fat without the cholesterol associated with meat.
Started by Dan Staackmann and Russ Calderwood, Upton's has been selling faux-meat/vegan products since 2006... if only they'd distribute in Canada!

Le Bernardin. Chef Eric Ripert. The Selby.










Stoked to see French Chef Eric Ripert featured on The Selby. His restaurant, Le Bernardin in NYC, is ranked among the best in the world, and holds the max rating of 4 stars from the NY Times and 3 Michelin stars. As a regular guest on Anthony Bourdain's No Reservations, and guest judge on Top Chef, Eric Ripert has become somewhat of a 'celebrity chef'. While Ripert's cooking is not exactly my cuppa tea, his menu is thoughtful, food is beautiful, and I appreciate the fact that he uses quality local, seasonal ingredients, showing his respect for food.

Mark Kurlansky, the chronicler of Cod, Salt, and The Last Fish Tale, has a new book, the illustrated World Without Fish. The book provides modern stories about the destruction of the ocean ecosystem. He explains, in considerable historical detail, what we've done to imperil fish, what the decline of fish means for the entire ocean ecosystem, and what needs to change. Frank Stockton's amazing illustrations make this book both kid and adult friendly.
